It is produced in pear shapes and made in pairs tied together at the top so they can be hung up to allow the brine to drip during the ripening process.
Provola with citrus fruits is enriched with "Tarocco" orange and "Verdello" lemon, which give to the paste, during the aging process, the sweet taste of orange or lemon.
It is straw-coloured but this can vary according to the aging process.
Weight ranges from 1.2 kg up to 2.5 kg.
