It is produced in pear shapes and made in pairs tied together at the top so they can be hung up to allow the brine to drip during the ripening process.
Provola can also be made in various shapes: round, oval , cacetto, loaf or mushroom.
It is straw-coloured but this can vary according to the aging process.
Weight ranges from 500 g up to 5/6 kg. It can also be smoked.
